Wisconsin Union brings Roman-inspired pinsa pizza to downtown Madison with new restaurant, Pedone Pinsa

The Wisconsin Union team will open a new dining option, called Pedone Pinsa, at the Wisconsin Institutes for Discovery, also known as the Discovery Building, on Aug. 26 that features a menu built around Wisconsin-made, Roman-style pinsa pizza. 

Originally developed in Rome, Italy, the flatbread-style crust, called pinsa, is known for its light texture and crisp exterior, which the Union team will pair with chef-created toppings combinations. 

The pinseria’s menu will include four pinsa varieties at a time, with one of the selections changing throughout the year. The menu is designed around fresh ingredients and quick service. The team bakes each pinsa for about 90 seconds when a customer places an order. 

The pinseria will debut with a menu that is anticipated to feature hot honey pepperoni pinsa, margherita pinsa, and Italian sausage, garlic and arugula pinsa. The limited-time pinsa in September is anticipated to be a prosciutto, fig and arugula pinsa. 

“Join us at the Discovery Building to enjoy pinsa inspired by an ancient Roman recipe and paired with our chefs’ flavor combinations,” said Carl Korz, Wisconsin Union associate director for dining and hospitality. “We are pairing a Wisconsin-made product with the creativity of our culinary team to offer customers something special in Madison.”

The pinsa crust is produced by Pedone Pinsa, a Burlington, Wis.-based company that specializes in traditional pinsa made with a blend of non-GMO flours, no added sugars and no artificial flavors. Each Pedone Pinsa crust is hand-pressed to create a light, airy texture yet has a dynamic flavor profile. Through this partnership, the Wisconsin Union team is sourcing a Wisconsin-made product while bringing a style of flatbread with roots in Italian culinary tradition to Madison. 

Pedone Pinsa is the Wisconsin Union team’s newest dining option in downtown Madison. The nonprofit Wisconsin Union operates more than 30 cafes, markets and restaurants designed to meet patrons’ needs, whether they have 30 minutes between meetings or classes and take their meals to go or they have time to dine in a Wisconsin Union space. Purchases at this and all Wisconsin Union-run dining options support the nonprofit Wisconsin Union’s work to provide gathering spaces, events and student leadership opportunities, some of which provide academic stipends of up to 80% of students’ in-state tuition.
